Carrot Soup

Ingredients:

2 tbsp unsalted butter - 450g carrots, diced 1 onion,chopped - 1 tbsp coriander seeds, roasted and crushed - 1 tbsp sugar - 3 cups stock salt and pepper - 1 tbsp cream (optional)

Description:

Melt the butter in a large pan and fry the carrots and onion untill soft but not browned. Add the coriander, sugar, stock, salt and pepper. Bring to the boil, cover and simmer gently for 15 minutes until the carrots are tender. puree the soup, diluting with a little more water if it is too thick. Reheat before serving topped with cream.
